Career Achievements

  • Development and expansion of nonprofit making, none rated hotel and restaurant to achieve 3 star statuses through Visit Scotland. This was achieved on a limited budget with turnover now vastly improved and showing a significant profit.
  • Development and implementation of robust food safety procedures which has resulted in a previously failing kitchen being recognised as a high standard by the local Environmental Health Service. EHO visits reduced from 3 monthly to 18 monthly.
  • Increasing restaurant nonresident meals from 40 covers per week to over 500 covers per week. This took the business to a new operating level not previously achieved.
  • Achievement of the Scottish Government recognised Healthy Living Award that included menu redesign and introduction of healthy cooking practices.
  • Successful introduction of an effective stock management programme designed to eradicate stock take deficits.
