  • Supervised the design, construction and opening of a new pub concept in a 4 star hotel. Trained the staff, devised a successful marketing strategy to make this pub one of the busiest “watering holes” in the vicinity of the hotel.

  • Responsible directly to the owners for the operation and profitability of this small 16 bed-roomed country house Hotel During my time here, staff turnover has dropped dramatically, sales and profitability has increased year on year, and we now have a very healthy wedding trade and repeat business.
  • The AA had increased our three star % rating and we had a rosette for good food until the owners decided to withdraw from AA membership.
  • Increased revenue has enabled the owners to extend the property, which will further increase the Hotel’s capability for the future.
  • Generated the name and quality image of Lakeview Hotels in the community.
  • Groomed and trained future managers for transfer within the chain.

  • Improved occupancy rate from 33.5 % to 92% average.
  • Responsible for all areas of a 73 room full service hotel 4 meeting rooms and 368 cover Fogg N Suds pub style restaurant with live entertainment..
  • Installed 12 draft lines in restaurant pub. Monitored liquor service. Introduced a new food and liquor menu. Increasing liquor profits and reducing beverage cost of sales from 56% to 25%. Also reducing food costs from 60% to 35%
  • Weddings and banquets from 25 to 275 guest.
